A plastic roof panel? Maybe in Polycarbonate (aka Lexan); but over time it would scratch really bad; you can polish it out, but that never seems to last very long (look at a plastic window in a convertible after five to eight years, that why most have glass now).
When you have Polycarbonate you have to be careful how you clean it; forget about using a car wash; don't ever wipe it with paper towels (they do scratch plastic if you use the wrong kind), and make sure it's always wet with something (soapy water, glass cleaner).
If you want something like that, go for it; for my own vehicle, I wouldn't do it.
And if you're wondering if I have a sunroof in my personal vehicles; yes, I've had more cars with sunroofs than I have without.

They'r planning on pushing this system at the LA Auto Show, so I hope they have a major upgrade to this very creaky system, along with a broader selection of options. To name a few that are missing, custom seats, various storage devices (visor storage, pouches for door and right side), the promised rear-view camera, fender lights, FLIR, alternative dash instruments, performance tune switch (this may be standard, but probably not), carpet upgrades, VERY LOUD horn -- and I'm sure that there are plenty more useful, attractive items waiting to come. So EM, get on with the show.Slight update to the Configurator; selections are in a slightly different order than before. e.g. Automatic transmission is listed above Manual, Retro Fenders are listed above Standard, etc. There doesn't seem to be any sort of rhyme or reason to the change.
Also, I noticed that the upper A-arm in the Configurator model matches the design seen in the E-series pictures. Was it always like that? I don't remember.

Another slight update: the TPMS option is no longer marked as "new", so perhaps we could be in for some new options soon? Just checked and nothing yet....
