Thanks, Jim! Contemplating making a bunch of them and freezing them for when I'm feeling lazy. I'm thinking they'd be fantastic in the oven when the weather's crappy.

in the last few years we've gotten away from cooking Baby Back Ribs but yesterday I developed a craving that would not be denied ..:).. we are currently in South Dakota in our camper so this morning we drove 20 some miles to a Hy-Vee and bought a couple of racks of their in house ribs which are marketed to have more meat .... to me that's a good thing .... brought them home :

1. picture 1 ... removed the inside membrane, cut them into sections and boiled them for an hour

2. picture 2 ... seasoned with our go to TexJoy Steak Seasoning and placed on our Holland Companion fitted with an 8" Smoke Daddy

3. picture 3 ... when rain started coming down, I moved under the front of our 5er ..:) where I had a different view (picture 4) of our grill than I'm used to seeing .. :sack:

4. picture 5 ... ribs after 1 hr of cold smoking with hickory pellets

5. picture 6 ... ribs after 1 hr hot smoking with hickory pellets

6. picture 7 ... ribs coated with Sweet Baby Ray's Hickory and Brown Sugar BBQ Sauce and placed in foil

7. picture 8 ... ribs after being kept warm for 1 hr

8. picture 9 ... ribs served, fall off the bone tender

OUTSTANDING

Wilted lettuce, just like Mom used to make! Thanks, I'd forgotten how simple it is.

Submitted for your approval, my wife's outstanding Vegetarian Gumbo:

Quantities of ingredients are largely optional, you just pour it in a pot and season to taste. This is more a general idea than a specific recipe. Traditionally, gumbo is created from what's in the pantry and what had the misfortune to step into your traps. My wife cooks on instinct, like my grandmother who never wrote anything down. Creative, it is.

6 cans diced tomatoes
2 cans of sweet corn
6 packages of frozen okra
2 cans of kidney beans
3 cans of tomato sauce
1 jar of Herdez Roasted Pasilla Chile cooking sauce (I'd add this sparingly at first, to taste - it's a little HOT)
Season with a splash of Zatarain's crab boil and a bit of Tony Cachere's Creole Seasoning. Cheat the vegetarian thing with chicken or sausage, or add fresh shrimp, crab, crawfish, or fish in season if you can't handle being vegan.

Serve with corn chips, wheat crackers, or whatever garnish you choose. You can serve over a bed of white rice if you want to be traditional - it helps dilute the dish a bit if you overshoot the spices. This is one of those dishes that gets better in the refrigerator. Leftovers, should you have any, get better the second and third day.

Note: Be careful with the cooking sauce, particularly in the vegetarian version. Without a good deal of meat to work on, it's plenty spicy.
Nice to see another Vegan posting- lol
Stay well my friends- Enjoy the 4th

Back to basics. The White steamer. This recipe makes me feel a little like a Union sympathizer in that I'm from the home of good Barbeque but this hamburger recipe is from a little town in Southern Indiana named Washington. One of our southern spies discovered a little known hole in the wall there called the White Steamer. Enjoy.

Two of my favorites. Guess we will have to give it a try.

I may have to par cook the bacon before I try this in my next batch of cinnamon rolls. I have crumbled crispy bacon into my Caramel Pecan Rolls made with from scratch dough.

My local donut shop sells a maple glazed long john with a full strip of crispy bacon across the top. A beautiful sight to behold.
